Sorrel Drink

  • 1 pound/450 g sorrel
  • 2-4 ounces ginger root
  • 8 cups water
  • Sugar, to taste
  • Wine or rum (optional)
  • 8-12 pimento/all spice grains


  1. Wash sorrel thoroughly and place in stainless steel container.
  2. Scrape, wash and grate ginger.
  3. Add ginger and pimento to sorrel.
  4. Boil water and pour over sorrel. Allow to stand for between 4 and 6 hours then strain.
  5. Sweeten to taste and add rum to taste.
  6. Add optional wine.
