Roasted Breadfruit Salad

  • 1 pound/450 g. roast breadfruit
  • 5 ounces/150 g diced bell (sweet) peppers (green, yellow and red)
  • 3 1/2 ounces/100 g diced onions

DRESSING

  • 1 clove chopped garlic
  • 2 tablespoons olive oil
  • 2 tablespoons mayonnaise
  • 1 tablespoon honey
  • Salt and pepper

Directions

  1. Peel and dice the roast breadfruit.
  2. Make the dressing by combining all the ingredients.
  3. Bind the dressing with diced breadfruit and bell peppers.

Serve cold
