Mango Upside-Down Cake

- 1 Duncan Hinds pineapple upside down cake mix
- 3 ripe but firm mangoes
- 1/2 cup dark sugar
- 1/2 cup butter
Direction
- Make cake as directed. Add1/4 tsp flour to the batter. Mix.
- In the oven, melt butter in an 8-inch round cake pan and spread dark sugar evenly.
- Slice mangoes and arrange in the butter and sugar mixture.
- Before adding the batter, tap the bottom of the cake pan to get rid of air bubbles. Add batter to the butter and sugar mixture.
- Bake at 350 degrees F for 15 mins. then turn oven down to 300 degrees F. Bake for about 30 mins. more until cake is done. Test with a knife.
- Let cool for 15 mins. Trim the top of the cake, if necessary, before turning upside down on a plate.
