Mango Upside-Down Cake

  • 1 Duncan Hinds pineapple upside down cake mix
  • 3 ripe but firm mangoes
  • 1/2 cup dark sugar
  • 1/2 cup butter


  1. Make cake as directed. Add1/4 tsp flour to the batter. Mix.
  2. In the oven, melt butter in an 8-inch round cake pan and spread dark sugar evenly.
  3. Slice mangoes and arrange in the butter and sugar mixture.
  4. Before adding the batter, tap the bottom of the cake pan to get rid of air bubbles. Add batter to the butter and sugar mixture.
  5. Bake at 350 degrees F for 15 mins. then turn oven down to 300 degrees F. Bake for about 30 mins. more until cake is done. Test with a knife.
  6. Let cool for 15 mins. Trim the top of the cake, if necessary, before turning upside down on a plate.
