Otaheite Apple Spread

Summer/Fall 2006

  • 12 ripe otaheite apples
  • Juice of 2 limes (or lemons)
  • Granulated sugar


  1. Cut apples in small pieces and discard seeds.
  2. Blend pieces with small amount of water to get pulp.
  3. For each cup of pulp, add 3/4 cup sugar.
  4. Put to cook on a low flame and add lime juice.
  5. Cook until there is no free syrup.
  6. Bottle in sterilized jars.

Use as filling for tarts or spread on bread or biscuits.
