Otaheite Apple Spread
Summer/Fall 2006
- 12 ripe otaheite apples
- Juice of 2 limes (or lemons)
- Granulated sugar
Direction
- Cut apples in small pieces and discard seeds.
- Blend pieces with small amount of water to get pulp.
- For each cup of pulp, add 3/4 cup sugar.
- Put to cook on a low flame and add lime juice.
- Cook until there is no free syrup.
- Bottle in sterilized jars.
Use as filling for tarts or spread on bread or biscuits.
