Tamarind Juice

Summer/Fall 2006

  • Bunch of tamarind
  • 2 sticks cinnamon
  • Sugar to taste


  1. Remove tamarind from shell and place in a pot of water.
  2. Add a couple of cloves or a cinnamon stick (optional) and bring to a boil.
  3. Let cool, then strain through a sieve.
  4. Add sugar to taste and serve chilled.
