- Squeeze the milk from several grated coconuts and strain into a pot. Let it boil on a high fire until oil is formed.
- Allow it to cool then pour the oil into another container. This will leave a thick layer which is called custard.
- Eat the custard by itself or season with pepper, salt and other herbs and spices as desired.
This is particularly delicious when eaten with fried plantain.
