Royal Icing

Issue 3, 2016

Beat 3 (Grade A) egg whites in clean, large bowl with mixer at high speed until foamy. Gradually add 5 cups sifted confectioners’ sugar, 1 tsp each lemon extract and vanilla.

Beat at high speed until thickened.

Note: When dry, Royal Icing is very hard.
